Apple Frittata

Apple Frittata is an easy and quick (25) minute recipe for a sweet, oven baked, puffy frittata. It is made with brown sugar and thyme for a delicious breakfast or brunch option. It is also a healthy, low calories, low fat, low sodium, low carbohydrates, low sugars, diabetic friendly Weight Watchers (3) PointsPlus  and (5) SmartPoints recipe. Makes (6) Servings. Total Time: 25 Minutes.


Butter flavor cooking spray
6 eggs
1/3 cup whole milk
1/4 cup white whole wheat flour
2 medium-size cooking apples
1 tbsp packed brown sugar
fresh thyme leaves (1 tbsp)


1. Preheat oven to 425° F.

2. Lightly coat a 3 quart size ovenproof pan with cooking spray.

3. Rinse thyme and pat dry. Strip thyme leaves from stem.

4. Core and chop apples. Place in a large mixing bowl. Add in brown sugar and thyme. Toss to mix well. Set aside.

5. In a medium size bowl, whisk together the eggs, milk, and flour. Pour into the prepared pan.

6. Gently place the tossed apple slices into the pan.

7. Place pan into preheated oven and bake until puffed, golden brown and set in center (8 to 10 minutes).

8.  Remove from oven and let rest 5 minutes. Cut into 6 equally sized wedges.

YIELD: 6 Servings.
Serving Size: 1/6 of recipe.
