Apricot Strudel Bites

Apricot Strudel Bites is a delicous recipe for a brunch, dessert and/or treat. This would also work  for guests who might be sleeping over and holiday gatherings. The rich filling of apricots, walnuts, raisins and cinnamon are placed in a made from scratch crust which includes cream cheese. It makes (60) pieces and is also a healthy, low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, heart-healthy, diabetic-friendly and Weight Watchers (3 PointsPlus), (4 SmartPoints) recipe. Apricot Strudel Bites will be loved by all of your family, friends and guests.

Prep Time: 1 Hour.

INGREDIENTS:

1 cup butter, softened
1 (8 oz bar) cream cheese, softened
2-1/2 cups all-purpose flour, divided
1 tbsp ground cinnamon
1/4 cup sugar
2 (10 oz) jars Smucker’s® Simply Fruit® Apricot Spreadable Fruit
1-1/4 cups raisins
1-1/4 cups chopped walnuts
Powdered sugar

DIRECTIONS:

1. Beat butter and cream cheese together in a medium size bowl with electric mixer. Add in 2 cups of the flour, one cup at a time, until mixture forms a ball. Flatten dough into disk. Wrap with plastic wrap. Chill 1 hour.

2. Preheat oven to 350° F. Combine the cinnamon and sugar together in a small bowl. Dust work surface with remaining 1/2 cup flour. Divide dough into 10 equal pieces. Roll each piece into a 9″ circle.

3. Spread each circle with 2 tablespoons fruit spread, sprinkle with cinnamon sugar mixture, 2 tablespoons raisins and 2 tablespoons walnuts. Roll filled circle into a log shape, seam side down and tuck ends under. Place strudels 2 inches apart on cookie sheets.

4. Bake 35 to 40 minutes or until golden brown. Cool. Cut each log into 8 pieces, about 1″ wide. Sprinkle with powdered sugar. Place in small paper baking cups to serve, if desired.

YIELD: 60 pieces.
