Artichoke-Chicken Parmesan

Artichoke-Chicken Parmesan is a quick (40) minute recipe for an oven-baked, Italian-style meal. Summary: Boneless chicken breasts, and canned artichoke hearts are combined with white wine, onion,  lemon slices, Parmesan cheese and baked. It is well-seasoned with pepper, salt, rosemary and thyme. This is also a healthy, low calories, low fat, low sugars, low carbohydrates, diabetic-friendly and Weight Watchers (7 SmartPoints), (8 PointsPlus) recipe. Makes: (4) servings. 4 (6 oz) boneless, skinless chicken breast halves
3 tsp olive oil, divided
1 tsp dried rosemary, crushed
1/2 tsp dried thyme
1/2 tsp ground black pepper
2 (14 oz) cans, water-pack artichoke hearts,
drained, quartered

1 medium-size onion, coarsely chopped
1/2 cup white wine or low-sodium chicken broth
2 garlic cloves, chopped
1/4 cup shredded Parmesan cheese
1 lemon, cut in 8 slices
2 green onions, thinly sliced


1. Preheat oven to 375° F.

2. Place chicken in a 15″ x10″ x 1″ baking pan coated with cooking spray; drizzle chicken with 1-1/2 teaspoons of the olive oil.

3. In a small bowl, mix together the rosemary, thyme and black pepper; sprinkle half of it over the chicken.

4. In a large bowl, combine artichoke hearts, onion, wine (or chicken broth), garlic, remaining oil and remaining herb mixture; toss to coat. Arrange around chicken. Sprinkle chicken with cheese; top with lemon slices.

5. Place in oven and bake 20-25 minutes or until a meat thermometer inserted in chicken reads 165° F. Sprinkle with green onions.

Yield: 4 servings.
Serving Size: 1 (6 oz) chicken breast half + 3/4 cup vegetable mixture.
