Asian Chicken-Mushrooms is a delicous recipe for an Oriental style meal option. It is a pan-roasted recipe and takes less than 1 hour from start to finish. This recipe features chicken breasts, garlic and shiitake mushrooms cooked in chicken broth, soy sauce and toasted sesame salad dressing. It is also a healthy, low calories, low fat, low sugars, low carbohydrates, diabetic-friendly and Weight Watchers (7 SmartPoints), (7 PointsPlus) recipe. 4 small boneless, skinless chicken breasts (1 lb total),
pounded to 1/2″ thickness
3 tbsp all-purpose flour, divided
6 tbsp Asian toasted sesame salad dressing, divided
(1 lb) shiitake mushrooms, quartered
4 garlic cloves, minced
1 cup fat-free-low-sodium chicken broth
2 tbsp lite soy sauce
2 cups hot cooked Jasmine rice, (optional)
1. Place 2 tbsp of the flour in a pie plate. Add in chicken, 1 piece at a time; turn to evenly coat both sides of each breast.
2. Heat 2 tbsp of the salad dressing in a large nonstick skillet over medium-high heat. Add chicken; turn to evenly coat both sides with dressing. Cook 3 to 4 minutes on each side or until evenly browned on both sides. (Chicken will not be done.) Transfer chicken to a plate; cover to keep warm.
3. Add another 2 tbsp of the remaining dressing and all the mushrooms to the skillet; cook 8 minutes or until golden brown, stirring occasionally and adding the garlic for the last minute. Stir in remaining flour; cook and stir 1 minute. Add remaining dressing, broth and soy sauce; cook and stir 2 minutes or until slightly thickened.
4. Return chicken to skillet; spoon mushroom mixture over chicken. Cook 2 minutes or until done.
Serve this Asian-style main dish with 2 cups hot cooked jasmine rice. (optional)
