Asparagus-Vinaigrette is an easy and quick (30) minute recipe for an Italian-style side. This would work well for your Christmas, Thanksgiving and/or Easter holiday menus. Vegetables Include: Asparagus, peas, sugar-snap peas and shallots which are boiled and then sauteed and served with a made from scratch tarragon vinaigrette and crumbled bacon. This is also a healthy, low calories, low fat, low cholesterol, low sodium, low carbohydrates, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (3 PointsPlus), (5 SmartPoints) recipe. 3 quarts water
2 cups frozen green peas, thawed
(1-1/2 lbs) fresh asparagus, trimmed, halved crosswise
(1 lb) fresh or frozen sugar-snap peas, thawed
5 center-cut bacon slices
3 Tbsp extra-virgin olive oil
3/4 cup chopped shallots
2 Tbsp tarragon vinegar
1 tsp Dijon mustard
1 Tbsp chopped fresh tarragon
3/4 tsp kosher salt
1/4 tsp ground black pepper
1-1/2 tsp lemon zest


1. Bring water to a boil in a large Dutch oven over high heat. Add in the green peas, asparagus, and sugar-snap peas; cook 3 minutes. Drain and rinse under cold water. Drain again.

2. Cook bacon in a large non-stick skillet over medium heat until crisp. Transfer bacon onto paper towels to absorb the grease; crumble.

3. Discard all but 1 tablespoon bacon drippings; add the olive oil to the Dutch oven over medium heat. Add in the shallots; cook 4 minutes, stirring occasionally. Add vinegar and mustard; cook 30 seconds. Add asparagus mixture, tarragon, salt, and pepper; cook 1 minute.

4. Remove from heat; stir in crumbled bacon and lemon zest.

Yield: 8 Servings.
