Avocado-Bean Appetizer

Avocado-Bean Appetizer [Note: You will need a (10″) Pie Pan or Pizza Pan for this recipe]. This is a quick (1) Hour no-cooking recipe which would work well for large holiday or event gatherings. It takes (20) minutes to prepare and (1) hour to chill for a fantastic, layered-dip and served with tortilla chips. Ingredients Include: Avocados, refried beans, sour cream, Cheddar and Colby-Jack cheese, olives and tomatoes. This is also a healthy, low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, heart-healthy, diabetic-friendly and Weight Watchers (3 SmartPoints), (2 PointsPlus) recipe. Makes: 16 Servings. Serving Size: (3/4) cup per serving. Avocado-Bean Appetizer will be loved by all of your family, friends and guests.

1 (10.5 oz) can refried beans
2 medium-size avocadoes, mashed
2/3 cup sour cream
1/2 cup shredded Cheddar cheese
1/2 cup shredded Colby-Jack cheese
1 (4-1/2 oz) can chopped ripe olives
2 large tomatoes, diced
4 green onions, chopped
2 bags tortilla chips


1. On a 10″ pie pan or a round pizza pan. Spread a layer of refried beans on bottom of the pan.

2. Spread the mashed avocados evenly over the beans. Spread sour cream on top of avocados.

3. Sprinkle on shredded cheeses, followed by a layer of olives, green onions and tomatoes.

4. Refrigerate one hour. Serve with tortilla chips.

Yield: 16 servings.
Serving Size: 3/4 cup dip per serving.
