1 (10.75 oz) can condensed cream of potato soup
3 cups skim milk
2 cups chunk-style hash brown potatoes
1 cup shredded 2% sharp Cheddar cheese
2 slices bacon, cooked, crumbled
2 green onions, thinly sliced
(1-1/2 tsp) ground black pepper
1. Mix soup and milk together in a large saucepan. Stir in hash browns and black pepper.
2. Bring to a boil over high heat, stirring occasionally. Simmer over medium-low heat 10 minutes, stirring frequently.
3. Serve topped with cheese, bacon and onions.
Suggestion: Serve with crusty whole grain rolls or bread.
Yield: 6 servings.
