Baked Squash and Apples

Baked Squash and Apples is a delicious recipe for a fall and winter side dish. This would be a great option for the Thanksgiving, Christmas and Easter holiday menus. It is also a healthy, low calories, low fat, low cholesterol, low sodium, low carbohydrates, low sugars, diabetic-friendly,  heart-healthy and Weight Watchers (5 SmartPoints), (3 PointsPlus) and vegetarian recipe. Prep Time: 20 Minutes.
Cooking Time: 1 Hour.
Total Time: 1 Hour-20 Minutes.

INGREDIENTS:

1/3 cup granulated no-calorie sweetener
1 tsp molasses
1/4 cup light butter
2 tbsp flour
1 tsp salt
1/2 tsp ground mace
2 lbs butternut squash, peeled,
seeded, cut into 1/2″ slices

2 large cooking apples (such as Granny Smith or Jonathan),
cored, cut into 1/2″ slices

DIRECTIONS:

1. Preheat oven to 350º F. (175º C.)

2. In a medium bowl, stir together sweetener, molasses, butter, flour, salt and mace. Arrange squash in an ungreased 9″ x 13″ baking dish. Top with slices of apple, then sprinkle with sugar mixture. Cover with lid or aluminum foil.

3. Bake for 50 to 60 minutes or until squash is tender.

Yield: 8 Servings
