BBQ Chicken-Fruit Salad

BBQ Chicken-Fruit Salad is a delicious, easy and quick recipe which takes only 30 to 40 minutes. Broiled chicken breasts basted with barbecue sauce, strawberries and broiled pineapple rings over salad greens topped with Catalina salad dressing makes up this awesome recipe for a tasty meal. It is also a low calories, low fat, diabetic friendly and Weight Watchers (8) PointsPlus recipe. Makes (4) servings. BBQ Chicken-Fruit Salad will be loved by all of your family, friends and guests.

INGREDIENTS:

4 (4 oz) boneless, skinless chicken breasts
1/2 cup thick-style barbecue sauce (such as “BullsEye”)

4 canned pineapple slices
1 (10 oz) bag torn mixed salad greens
1 pint fresh strawberries, halved
1/2 cup creamy light Catalina salad dressing

DIRECTIONS:

1. Preheat broiler.

2. Broil chicken 4″ from heat 20 to 25 minutes or until chicken is done (165ยบ F.), turning and brushing frequently with barbecue sauce for the last 15 minutes and adding pineapple the last 5 minutes of broiling time.

3. Cut chicken into strips.

4. Arrange greens and strawberries on a serving plate. Top with chicken, then pineapple.

5. Divide equally, on 4 plates and serve with the dressing.

YIELD: 4 servings.
