Beef-Cucumber Salad

Beef-Cucumber Salad is an easy recipe for an Indian-Style meal. Ingredients include: Beef sirloin steak, yogurt, onions, cucumbers, fresh mint and seasonings. It takes just over (30) minutes total time for this delicious recipe. This is also a healthy, low calories, low fat, low cholesterol, low sodium, low carbohydrates, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (3 SmartPoints), (4 PointsPlus) recipe. 1 (8 oz) carton plain, fat-free or low-fat yogurt
1-4 cup coarsely shredded unpeeled cucumber
1 Tbsp finely chopped red or sweet onion
1 Tbsp snipped fresh mint
1/4 tsp granulated sugar
Salt and ground black pepper (to taste)
(1 lb) boneless beef sirloin steak, cut 1″ thick
1/2 tsp lemon-pepper seasoning
Fresh mint leaves, for garnish, (optional)


1. Remove rack from broiler and Preheat the broiler.

2. For the Salad: In a small bowl combine yogurt, cucumber, onion, snipped mint, and sugar. Season to taste with salt and pepper; set aside.

3. Trim fat from meat. Sprinkle meat with lemon-pepper seasoning. Place on the unheated rack broiler pan. Broil 3″ to 4″ from heat, turning meat over after half of the broiling time. Allow (15 to 17) minutes (145 F.) for medium-rare doneness and (20 to 22) minutes, (160 F.) for medium doneness.

4. Cut steak across the grain into thin slices. If desired, garnish steak slices with mint leaves. Serve with the salad mixture.

Yield: 4 servings.
