Beefy-Mac Skillet

Beefy-Mac Skillet is a stovetop recipe for a hearty, any-day of the year, family meal. Ingredients Include: Lean-Ground Beef, elbow macaroni, carrots, onions, mushrooms, beef broth and sour cream. It is also well-seasoned and takes about (40) minutes to make. This is also a healthy, low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, heart-healthy, diabetic-friendly and Weight Watchers (5 PointsPlus), (6 SmartPoints) recipe. Equipment Needed:
(Large skillet or Dutch oven + Food Processor).

INGREDIENTS:

3 garlic cloves, peeled, crushed
2 medium-size carrots, cut in 2″ pieces
(10 oz) large white mushrooms, halved
1 large onion, cut in 2″ pieces
(1 lb) 90%-lean ground beef
2 tsp dried thyme
3/4 tsp salt
1/4 tsp freshly ground black pepper
2 cups water
1 (14 oz) can low-sodium beef broth, divided
(8 oz) uncooked whole-wheat elbow macaroni, (2 cups)
2 Tbsp Worcestershire sauce
2 Tbsp all-purpose flour
1/2 cup low-fat sour cream
1 Tbsp chopped fresh parsley, or chives for garnish

DIRECTIONS:

1. Fit a food processor with the steel blade attachment. With the motor running, drop garlic through the feed tube and process until minced, then add carrots and mushrooms; process until finely chopped. Turn of processor and addthe onion. Pulse until roughly chopped.

2. Cook the ground beef in a large straight-sided skillet or Dutch oven over medium-high heat, breaking it up with a wooden spoon until no longer pink. (3 to 5 minutes). Stir in the chopped vegetables, thyme, salt and black pepper. Cook, stirring often until vegetables start to soften and mushrooms release their juices, (5 to 7 minutes).

3. Stir in the water, 1-1/2 cups of the broth, the noodles and the Worcestershire sauce. Bring to a boil. Cover and reduce heat to medium. Cook, stirring occasionally until pasta is tender, (8-10 minutes).

4. Whisk flour with the remaining 1/4 cup broth in a small bowl until smooth; stir into the hamburger mixture. Add and stir in the sour cream. Simmer, stirring often until sauce is thickened, (about 2 minutes). Serve sprinkled with parsley (or chives), if desired.

(SUGGESTION: Add a salad on the side if desired to round out the meal., optional).

Yield: 6 Servings.
