Berry-Spinach Salad

Berry-Spinach Salad is delicious recipe for a fruit, nuts and vegetable salad. Ingredients include: Fresh blueberries, almonds, dried cranberries, green onions, spinach and cheese. It is all tossed together with a blackberry vinaigrette. This is also a healthy, low calories, low fat, low cholesterol, low calories, low sodium, low carbohydrates, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (6 SmartPoints), (5 PointsPlus) recipe. Makes (4) servings. Berry-Spinach Salad will bberry-spinach-salade loved by all of your family, friends and guests.

Prep Time: 10 Minutes.



3/4 cup sugar-free, seedless blackberry jam
1/4 cup canola oil
1/4 cup red wine vinegar


4 cups baby spinach and leaf lettuce blend
1/2 cup fresh blueberries
1/4 cup dried cranberries
1/4 cup toasted sliced almonds*
1/4 cup sliced green onions
1/4 cup crumbled feta cheese


1. For the Viniagrette-Whisk jam, oil and vinegar together until blended. Set aside.

2. Layer salad ingredients on individual plates. Pour vinaigrette to taste over top. Toss gently.

3. Store remaining vinaigrette in refrigerator.

To Toast Nuts: Place nuts in a dry nonstick skillet. Cook over medium heat, shaking pan until nuts are lightly browned.

Yield: 4 servings.
