Braised Chicken Dinner

Braised Chicken Dinner is a delicious and easy recipe that is cooked on the stovetop. It Takes only (15) minutes to prepare and (40) minutes of cooking time. Less than (1) Hour total time from start to finish. This is a great option for an, any day of the week, meal. Summary: Boneless, skinless chicken breasts are seasoned and braised in broth with zucchini, mushrooms and carrots. 1/2 cup seasoned bread crumbs
6 (4 oz) boneless, skinless chicken breast halves
2 Tbsp olive oil
1 (14-1/2 oz) can beef broth
2 Tbsp tomato paste
1 tsp poultry seasoning
1/2 tsp salt
1/2 tsp ground black pepper
1 lb fresh baby carrots
1 lb sliced fresh mushrooms
2 medium-size zucchini, sliced
Sliced French bread baguette, optional


1. Place bread crumbs in a shallow bowl. Dip chicken breasts in bread crumbs to coat both sides; shake off excess crumbs.

2. In a Dutch oven, heat oil over medium heat. Add chicken in batches; cook 2-4 minutes on each side or until browned. Remove chicken from pan.

3. Add in broth, tomato paste and spices to same pan; cook over medium-high heat, stirring to loosen browned bits from pan. Add vegetables and chicken; bring to a boil. Reduce heat; simmer, covered, 25-30 minutes or until vegetables are tender and a thermometer inserted in chicken reads 165° F. NOTE: Check vegetables  for tenderness from time to time to avoid overcooking.
Optional:If desired serve with sliced baguette.

Yield: 6 servings.
