Broccoli-Apple Salad

Broccoli-Apple Salad is an easy, quick and delicious recipe for a healthy side. Summary: Broccoli and apples are sliced and then combined in a salad dressing using fat-free Greek yogurt, Dijon mustard, canola oil mayonnaise and lemon juice; topped with crumbled bacon and seasoned with fresh tarrogon and black pepper. This is also a healthy, low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, Weight Watchers (2 SmartPoints), (2 PointsPlus), diabetic-friendly and heart-healthy recipe. 3 Tbsp cider vinegar
1 tsp whole-grain Dijon mustard
1/2 tsp freshly ground black pepper
1/4 tsp kosher salt
1 shallot, thinly sliced
1/3 cup plain fat-free Greek yogurt
3 Tbsp canola oil mayonnaise
(1 tbsp + 1 tsp) chopped fresh tarragon
(12 oz) broccoli florets
1 Tbsp fresh squeezed lemon juice
2 Gala apples, cored and cut into wedges
2 applewood-smoked bacon slices, cooked and crumbled


1. Combine first 5 ingredients in a bowl, and let stand for 10 minutes. Add yogurt, mayonnaise, and tarragon; stir with a whisk.

2. With food processor on, add the broccoli through the food chute of food processor fitted with the slicer attachment. Transfer broccoli to a bowl. Add juice to bowl of food processor. Repeat procedure with apples; add apples to bowl with broccoli.

3. Combine dressing and broccoli mixture; toss well to coat. Cover and refrigerate for 3 hours. Stir in bacon just before serving.

Yield: 9 servings.
