Broccoli-Potato Mash

Broccoli-Potato Mash is an easy, quick (33 minute) recipe for a St. Patrick’s Day, cheesy  and creamy potato side. This is also a great way to get your kids to eat broccoli.  It is also a healthy, low calories, low fat, low cholesterol, low sodium, low carbohydrates, low sugars, vegetarian, gluten-free, heart-healthy, diabetic-friendly and Weight Watchers (4 SmartPoints), (4 PointsPlus) recipe. Prep Time: 15 Minutes.
Cooking Time: 18 Minutes.


1 lb Yukon Gold potatoes, cut into wedges
3/4  lb broccoli crowns, chopped (About 4 cups)
3/4 cup shredded fontina cheese
1/2 cup skim milk, heated
1/2 tsp salt
Freshly ground black pepper, to taste


1. Bring 1 inch of water to a boil in a large pot. Place potatoes in a steamer basket and steam for 10 minutes. Place broccoli on top, cover and steam until the potatoes and broccoli are tender, 6 to 8 minutes more. Transfer the broccoli to a large bowl and coarsely mash with a potato masher. Add the potatoes, cheese, milk, salt and pepper and continue mashing to desired consistency. Serve immediately.
