Cajun Shrimp Stew
Cajun Shrimp Stew is an easy recipe that takes only (45) minutes from start to finish for a great, spicy, shrimp meal. Ingredients include: Corn, tomatoes, bell peppers, shrimp and scallions. It is well seasoned and served over rice. This is also a healthy, low calories, low fat, low sodium, low sugars, low carbohydrates, diabetic-friendly and Weight Watchers (6) PointsPlus recipe. 1/2 cup no-calorie granulated seweetener
2 cups long grain rice
1 tbsp olive oil
1 (16 oz) bag frozen corn
4 chopped Roma tomatoes
1/2 chopped red bell pepper
1 cup chicken stock
2 tsp Creole or Cajun seasoning
1/2 tsp chili powder
1/4 tsp ground cayenne pepper
1 (16 oz) bag 31-40 count frozen, uncooked shrimp
1 cup sliced scallions
2/3 cup nonfat Greek yogurt
1. Boil the water in a large saucepan. Stir in sweetener and rice. Cover, reduce heat to low and simmer for 20 minutes. Set aside.
2. Heat the olive oil in a stock pot. Add corn, tomatoes and bell pepper. Sauté until soft. Add chicken stock, seasonings and shrimp. Allow liquid to reduce and shrimp to cook until pink, about 10 minutes.
3. Stir in scallions and yogurt. Serve over the rice.
Yield: 12 Servings.
Serving Size: 1/2 Cup Rice + About 3 Shrimp per serving + vegetables divided equally.
