Cheesy Baked Cauliflower

Cheesy Baked Cauliflower is a delicious side recipe that will work well as an option for holiday meals such as Christmas, Thanksgiving and Easter. It takes only (1) Hour total time to make. Ingredients Include: Fresh cauliflower, Cheddar cheese, sour cream, green and red bell peppers and Parmesan cheese. This is also a healthy, low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, diabetic-friendly, heart-healthy and Weight Watchers (4 PointsPlus), (6 SmartPoints) recipe. 1 head cauliflower, separated into florets
1 cup sour cream
1 cup shredded Cheddar cheese
1/2 cup crushed corn flakes
1/4 cup green bell pepper, finely chopped
1/4 cup red bell pepper, finely chopped
1 tsp salt
1/4 cup grated Parmesan cheese
Paprika, (optional)


1. Preheat oven to 325 F. (165 C.).

2. Grease a 2 quart baking dish.

3. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer.

4. Cover and bring water to a boil over high heat. Add in the cauliflower and steam until crisp-tender, about 5 minutes. Drain and set aside.

5. Combine together the sour cream, Cheddar cheese, corn flakes, bell peppers and salt in a medium-size bowl.

6. Stir in the cauliflower and transfer to the prepared baking dish.

7. Sprinkle Parmesan cheese (and paprika, if desired), over top of the dish.

8. Bake uncovered until heated through, 30 to 35 minutes.

Yield: 8 Servings.
