Cheesy Cauliflower Casserole is an easy option for a delicious and quick (1) hour total time vegetable side recipe. Suggested Uses: For Thanksgiving, Christmas and Easter holidays. Ingredients include: Cauliflower florets, bell peppers, corn, cream cheese, parsley, shredded cheese and Parmesan cheese. It is an oven-baked casserole which is both creamy and cheesy. INGREDIENTS:

7 cups small cauliflower florets
1 cup frozen corn
1 (8 oz) bar cream cheese, softened
1/4 cup milk
2 Tbsp grated Parmesan cheese
1/2 tsp garlic powder
1 red bell pepper, finely chopped
20 round crackers (such as Ritz), coarsely crushed
1 cup shredded Mexican-style Four Cheese blend
1/4 cup chopped fresh parsley

DIRECTIONS:

1. Preheat oven to 425° F.

2. Cook cauliflower in boiling water in a large saucepan 3 to 4 minutes or until crisp-tender, adding corn to the boiling water for the last minute. Drain, reserving 1/4 cup cooking water.

3. Mix the cream cheese, milk, Parmesan and garlic powder together until blended. Place cauliflower mixture in a 13″ x9″ baking dish sprayed with cooking spray. Add in the peppers and cream cheese mixture; stir until vegetables are evenly coated with sauce, adding reserved cooking water if necessary for desired consistency.

4. Mix together the cracker crumbs, shredded cheese and parsley; sprinkle over vegetable mixture. Cover.

5. Place in the preheated oven and bake 30 to 35 minutes or until vegetable mixture is heated through and topping is lightly browned, uncovering for the last 10 minutes of baking time.
