Cheesy Cauliflower

Cheesy Cauliflower is a delicious and easy to prepare recipe for a Thanksgiving vegetable side. Main Ingredients: Cauliflower, onions,  sour cream and Cheddar cheese. All assembled and baked in the oven. It takes just over 1 hour to make, from start to finish. It is also a low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, heart-healthy, diabetic-friendly and Weight Watchers (4) PointsPlus, (6 SmartPoints) recipe. Prep Time: 20 Minutes.
Cooking Time: 45 Minutes.
Total Time: 1 Hour-5 Minutes.

INGREDIENTS:

8 cups cauliflower florets
1 red onion, cut in 1/4″ thick slices
1/4 cup fresh squeezed lemon juice
2 tbsp olive oil
1/4 tsp, (or more to taste), ground black pepper
1/4 cup sour cream
1-1/2 cups finely shredded Cheddar cheese

DIRECTIONS:

1. Preheat oven to 450º F.

2. Combine first 5 ingredients; spread onto a foil-covered, rimmed baking sheet.

3. Bake for 40 minutes, stirring after 20 minutes.

4. Add the sour cream to vegetable mixture; mix well. Top with the shredded Cheddar cheese; bake 5 minutes or until shredded cheese is melted.

YIELD: 8 Servings.
Serving Size: 3/4 cup per serving.
