Cheesy Chicken Casserole

Cheesy Chicken Casserole is a delicious, creamy, easy and quick Tex-Mex recipe that takes only (45) minutes to make. Key Ingredients: Chicken breast meat, kidney beans, black beans, tomatoes, onions, celery, Cheddar cheese and mushroom soup. It is all well seasoned with chili powder and cumin. (NOTE: This may be made and frozen up to 3 months and includes directions for using later). 2 celery ribs, chopped
1 small onion, chopped
1-1/2 tsp olive oil
3 cups cubed cooked chicken breast
1 (16 oz) can kidney beans, rinsed, drained
1 (15 oz) can black beans, rinsed, drained
1 Tbsp chili powder
2 tsp ground cumin
1 (14-1/2 oz) can no-salt diced tomatoes, undrained
1 (10-3/4 oz) can low-fat, low-sodium condensed
cream of mushroom soup, undiluted

1 (4 oz) pkg. shredded 2% Cheddar cheese


1.  Preheat oven to 350° F. In a large nonstick skillet coated with cooking spray, saute celery and onion in oil until tender. Stir in chicken, beans, chili powder and cumin; heat through.

2. Transfer to a shallow 2-1/2 quart baking dish coated with cooking spray. Combine tomatoes and soup; pour over chicken mixture.

3. Bake, uncovered, 20 minutes. Sprinkle with the shredded cheese. Bake 5-10 minutes longer or until heated through and cheese is melted.

Freezing Ahead Option:
Cover and freeze unbaked casserole up to 3 months. To use, thaw in the refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350° F. Bake according to directions.

Yield: 6 servings.
