Cheesy Mashed Potatoes
Cheesy Mashed Potatoes is an easy and delicious side. Ingredients include: Sour cream, shredded Cheddar cheese, cauliflower and potatoes. It takes less than (1) hour to make these creamy potatoes all cooked in a skillet. Use them to accompany any meal, including holidays. This is also a healthy low fat, low calories, low sugars, low cholesterol, low sodium, low carbohydrates, heart-healthy, diabetic-friendly and Weight Watchers (4 SmartPoints), (3 PointsPlus) recipe. Cooking Time: 30 Minutes.
(1 lb) red potatoes (about 3), cut into chunks
1 cup small cauliflower florets
1/4 cup light sour cream
1 cup shredded 2% sharp Cheddar cheese
1. Cook potatoes and cauliflower in boiling water in a large saucepan for 20 minutes or until vegetables are tender; drain. Return to pan.
2. Add in sour cream and mash until vegetable mixture is fluffy.
3. Stir in the cheese.
Yield: 6 servings.
