Cheesy Stuffed Mushrooms
Cheesy Stuffed Mushrooms is an easy recipe for a delicious oven-baked appetizer to use for holidays, parties, large gatherings and events. Ingredients include: Mushrooms, bacon, cream cheese, Cheddar cheese, onions and bell peppers. This is also a low calories, low fat, low carbohydrates, low sugars, low cholesterol, low sodium, heart-healthy, diabetic-friendly and Weight Watchers (2 PointsPlus), (3 SmartPoints) recipe. (1 lb) whole white mushrooms
6 slices bacon, diced
3 green onions, chopped
1/4 cup diced red bell pepper
1 clove garlic, minced
1/4 tsp salt
1/8 tsp ground black pepper
(3 oz) cream cheese
1/2 cup shredded Cheddar cheese
2 Tbsp Italian bread crumbs
1 tsp olive oil
1. Preheat oven to 375 F. Clean mushrooms. Remove and chop stems; set aside.
2. In a large skillet, cook diced bacon over medium heat until almost crisp. Stir in green onions, red pepper, garlic and reserved mushrooms stems. Cook until tender; drain. Stir in salt and pepper. Transfer to a small bowl to cool slightly.
3. Stir in cream cheese and cheddar cheese until combined. Spoon bacon mixture into mushrooms caps; place caps in a lightly oiled baking dish.
4. In another small bowl combine bread crumbs and olive oil; sprinkle over mushrooms. Bake 20 to 25 minutes or until mushrooms are tender and bread crumbs are golden brown.
Yield: 12 Servings.
Serving Size: 1 large mushroom or 2 small per serving.
