Chicken-Bean Appetizer

Chicken-Bean Appetizer is a spicy, Tex-Mex style, Slow Cooker recipe which is best suited for large holiday or game-day crowds. You will need a 4-5 quart slow cooker for this. Ingredients include: Boneless chicken thighs, cannellini beans, tomatoes, Pepper-Jack cheese, cream of chicken soup. It is well-seasoned and served with tortilla chips. This is also a low calories, low fat, low cholesterol, low sodium, low carbohydrates, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (3 SmartPoints), (4 PointsPlus) recipe. Required Equipment: (4-5 Quart) Slow Cooker


1 (14-1/2 oz) can Mexican-style diced tomatoes, undrained
1 (10.75 oz) can condensed cream of chicken soup
1 tsp ground cumin
1/2 tsp cayenne pepper
1/2 tsp ground black pepper
2 (19 oz) cans  cans cannellini (white kidney) beans, drained, rinsed
(1-1/2 lbs) skinless, boneless chicken thighs, cut in 1/2″ pieces
1 cup, (4 oz pkg) shredded Pepper-Jack cheese
Tortilla Chips, for dipping
Chopped fresh tomatoes, optional
Sour Cream, optional


1. Lightly coat a 4 to 5 quart slow cooker with cooking spray. In the prepared cooker gently whisk together canned tomatoes, soup, cumin, cayenne pepper, and black pepper. Stir in beans, chicken, and cheese.

2. Cover and cook on LOW 5 to 6 hours or HIGH for 2-1/2 to 3 hours.

3. Serve with tortilla chips and if desired, sour cream and/or fresh chopped tomatoes.
