Chicken-Broccoli Skillet

Chicken-Broccoli Skillet is an easy, delicious and quick (30 minute) recipe for an any day of the week meal. Made with fresh chicken breasts, canned broccoli cheese soup and broccoli florets all cooked on the stovetop. Optionally serve over brown rice for a perfect full meal. It is also a low calories, low fat, low carbohydrates, low sugars, diabetic-friendly and Weight Watchers (6 SmartPoints), (6 PointsPlus) recipe. Makes (4) servings. Prep Time: 10 Minutes.
Cooking Time: 20 Minutes.

INGREDIENTS:

1 tbsp butter
4 (5 oz) skinless, boneless chicken breast halves
1 (10-1/2 oz) can condensed broccoli cheese soup (regular or fat-free)
1/3 cup water
1/8 tsp ground black pepper
2 cups fresh or frozen broccoli florets
Brown Rice, cooked, (optional)

DIRECTIONS:

1. Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides.

2. Stir the soup, water, black pepper and broccoli in the skillet and heat to a boil.  Reduce the heat to low.  Cover and cook for 5 minutes or until the chicken is cooked through. Serve over cooked brown rice if desired.

Yield: 4 servings.
Serving Size: 1/4 of recipe.
