Chicken Monterey Soup

Chicken Monterey Soup is a delicious, easy and quick (1 Hour), stove top recipe for a hearty, well-seasoned, chicken or turkey vegetable soup. Ingredients include: Cooked chopped chicken or turkey, carrots, celery, onions, tomatoes and apples. This is also a healthy, low calories, low calories, low sugars, low carbohydrates, low cholesterol, low sodium, diabetic-friendly, heart-healthy and Weight Watchers (5 SmartPoints), (5 PointsPlus) recipe. 1 Tbsp vegetable oil
1 cup chopped onions
1 cup sliced celery
1/3 cups chopped cooking apples
3 tsp curry powder
1/4 tsp salt
3 cups low-sodium chicken broth
3 cups water
2 cups chopped, cooked chicken or turkey


1. In a Dutch oven heat oil over medium heat. Add and stir in onions, carrots and celery. Cook about 10 minutes or until crisp-tender.

2. Reduce heat to medium-low; add in the apples, curry powder and salt. Cook, covered, for 5 minutes. Stir in the chicken broth, water, and undrained tomatoes.

3. Bring to boiling; reduce heat. Simmer, covered for 10 minutes. Stir in the chicken or turkey; simmer for ab additional 10 minutes.

Yield: 6 Servings.
Serving Size: 1-2/3 cups per serving.
