Chicken Pizza

Chicken Pizza is a delicious, easy and quick 40 minute recipe which is made with a ready to cook crust. Ingredients include: Chicken, tomatoes, mushrooms, onions and cheese. Seasoned with fresh basil, oregano and crushed red pepper. It is also a low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, heart-healthy, diabetic friendly and Weight Watchers (5) PointsPlus recipe. Makes 4 servings. Prep Time: 15 Minutes.
Cooking Time: 25 Minutes.

INGREDIENTS:

non-stick cooking spray
1 ready to heat pizza crust
1 (6 oz) boneless, skinless chicken breast
1/2 cup chopped onion
1 (4 oz) package shredded Mozzarella cheese
1/2 cup fresh sliced mushrooms,
(or canned, drained & rinsed)

1/2 tsp ground oregano
2 Roma tomatoes, sliced
1-1/2 tbsp fresh basil leaves
1 pinch crushed red pepper, or more if desired.

DIRECTIONS:

1. Preheat oven to 450° F.

2. Place pizza crust on a baking sheet and gently coat crust with cooking spray.

3. Cut chicken breast into 1″ cubes.

4. Coat a small skillet with cooking spray and preheat on medium temperature. Place chicken and onion in the skillet. Cook for 4 minutes, stirring often.

5. Sprinkle half of cheese on top of pizza crust.

6. Place chicken, onion and mushrooms over cheese; sprinkle with oregano. Place tomato slices on top.

7. Sprinkle with basil. Sprinkle remaining cheese on top.

8. Bake 25 minutes until cheese is melted and browned. Sprinkle with red pepper flakes, to taste. Cut into 4 equal size pieces.
