4 (4 oz) boneless, skinless chicken breasts (1 lb), pounded to 1/4″ thickness
1 (14 oz) can small artichoke hearts, drained, halved
1 cup grape tomatoes, halved
1/4 cup quartered, pitted Kalamata olives
1/4 cup Italian salad dressing
1/4 cup water
4 garlic cloves, minced
1/4 tsp crushed red pepper
1/4 cup Feta cheese crumbles
1. Cook chicken in a large deep skillet sprayed with cooking spray over medium-high heat 2 minutes per side or until evenly browned on both sides. Remove from skillet; cover to keep warm.
2. Combine all remaining ingredients except cheese in skillet. Bring to a boil. Return chicken to skillet; cover. Simmer over medium-low heat 6 to 8 minutes or until chicken is done (165º F.). Top with the cheese.
YIELD: 4 Servings.
