Chicken Tortilla Chili

Chicken Tortilla Chili is an easy, quick and delicious recipe that is almost like eating a chicken enchilada due to the tortilla chips. Chicken breast, tortilla chips, tomatoes, beans and corn account for the main ingredients all cooked in one pan on the stovetop. It is also a healthy, low calories, low fat, low cholesterol, low carbohydrates, Weight Watchers (6) PointsPlus recipe. Makes 6 Servings. 1 tbsp cooking oil
1 lb boneless, skinless chicken breast halves, cut into 3/4″ cubes

1 pkg chili seasoning mix
1 (14-1/2 oz) can diced tomatoes, undrained

1 (15 to 16 oz) can kidney beans, drained

1 (11 oz) can Mexicorn, drained
1/2 cup water
1-1/2 cups bite-size tortilla chips

Serving Suggestion:
Serve with assorted toppings, such as shredded cheese, sour cream and
chopped cilantro., optional


1. Heat oil in a large nonstick skillet over medium-high heat. Add in chicken; cook and stir 5 minutes or until lightly browned.

2. Stir in Seasoning Mix, tomatoes, beans, corn, water and tortilla chips. Bring to a boil. Reduce heat to low; cover and simmer 10 minutes, stirring occasionally.

3. Serve with toppings if desired.
