Crockpot White Chicken Chili

Crockpot White Chicken Chili is an easy, spicy, delicious and hearty recipe for a chicken or turkey chili.  -NOTE: (This recipe requires a 5 or 6 quart size slow cooker). It is a perfect option for holiday turkey leftovers. It takes only (20) minutes to prepare and (6) hours to cook. Ingredients include: Chicken or turkey breasts, onions, bell peppers, jalapeño peppers, navy beans, garlic and seasonings. This is also a low calories, low fat, low sugars, low carbohydrates, Weight Watchers (5 PointsPlus), (5 SmartPoints) and diabetic-friendly recipe. 1 slow cooker liner
6 cups cubed skinless, boneless chicken breast halves, or leftover turkey breast meat

2 (15 oz) cans navy beans, drained
1 cup canned chicken broth
1 cup chopped onion
1 cup finely chopped red bell pepper
1 jalapeño pepper, seeded, finely chopped
2 cloves garlic, minced
2 tsp ground cumin
1 tsp dried oregano leaves
1/2 tsp salt
1/2 tsp cayenne pepper


1. Open the slow cooker liner and place it inside a 5 to 6 quart slow cooker. Fit liner snugly against the bottom and sides of the bowl and pull top of liner over rim of bowl.

2. Place all the ingredients in the lined-slow cooker and stir gently to mix. Cover with the lid.

3. Cook on LOW 6 to 7 hours or HIGH 3 to 4 hours until mixture is hot and bubbly and the sauce slightly thickened.

4. Carefully remove the lid to allow steam to escape. Serve the chili directly from the slow cooker. Do not lift or transport the liner with the food inside. Cool the slow cooker completely, remove the liner and toss.

YIELD: 6 Servings.
Serving Size: 1-1/2 cups per serving.
