Diabetic Coconut Bars
Diabetic Coconut Bars is an easy and delicious recipe which takes less than 1 hour from start to finish. These crunchy and chewy bars will become one of your favorite recipes. It has a coconut center and crunchy crust with a brown sugar and pecan topping. It is also a low calories, low cholesterol, low sodium, low sugars, low carbohydrates, heart-healthy, diabetic friendly and Weight Watchers PointsPlus recipe. Makes (18) bars. 1/2 cup butter
1/2 cup brown sugar blend, packed, divided
1 cup all-purpose flour
1 tsp vanilla extract
2 tbsp all-purpose flour
1/2 tsp baking powder
1-1/2 cups coconut
1 cup chopped pecans
1. Preheat oven to 350º F.
2. Combine the butter, 1/4 cup of the brown sugar blend and 1 cup flour until a dough forms. Press into a 13″X 9″ baking pan. Bake for 10 minutes and remove from oven.
3. Blend the eggs, remaining 1/4 cup brown sugar blend, vanilla, 2 tbsp flour and baking powder. Stir in the coconut and the pecans.
4. Spread the filling onto the par-baked crust.
5. Return to the oven for 20 minutes. Cut into 18 bars.
YIELD: 18 Servings.
