Easy Brunch Casserole
Easy Brunch Casserole is a delicious recipe that works perfectly for a weekend breakfast or brunch. It takes just over (1) hour to make. Ingredients include: Red and green bell peppers, onion, and Cheddar cheese. It is also well spiced. This is not only delicious and easy to prepare but also a healthy, low calories, low fat, low cholesterol, low sugars, low carbohydrates, diabetic-friendly and Weight Watchers (7 PointsPlus), (8 SmartPoints) recipe. Cooking Time: 45-50 Minutes.
Non-stick cooking spray
1 green bell pepper, chopped
1 red bell pepper, chopped
1 small onion, chopped
2 cups no-cholesterol egg product
1 cup skim milk
3/4 cup shredded 2% Cheddar cheese
2 tsp Italian seasoning
1/2 tsp ground black pepper
4 slices whole whetat bread, torn
1. Cook vegetables in a medium-size nonstick skillet sprayed with cooking spray over medium-high heat for 4 minutes or until crisp-tender, stirring occasionally. Place in a large bowl. Add in egg product, milk, cheese and seasonings; mix well.
2. Place bread in 2 quart size 8″ x 8″ casserole sprayed with cooking spray; top with egg product mixture.
3. Bake 45 to 50 minutes or until knife inserted in center comes out clean. Divide into 4 equal-size servings.
Yield: 4 Servings.
