Easy Deviled Egg Spread
Easy Deviled Egg Spread is a delicious and quick (20) minute recipe for a large gathering or event. Great for holiday and game day crowds as well. Made with healthy ingredients to make it diet-friendly. 12 hard boiled eggs, divided
3/4 cup light reduced-fat mayonnaise
1/2 of (8-oz) bar Neufchatel cheese, cubed, softened
2 tbsp white vinegar
1 tbsp Dijon mustard
3 green onions, sliced, divided
1/8 tsp paprika
Assorted cut-up fresh vegetables and crackers. (optional)
1. Reserve 1 egg for garnish. Cut remaining eggs lengthwise in half. Remove yolks; place in food processor. Add mayonnaise, Neufchatel, vinegar, mustard and 12 of the egg white halves; process until blended. Spoon into medium bowl.
2. Chop the remaining egg white halves coarsely. Add to Neufchatel mixture with 2/3 of the onions; mix lightly.
3. Chop reserved egg finely; sprinkle over egg mixture in bowl along with remaining onions. Garnish with paprika. Serve with assorted cut up fresh vegetables and crackers if desired.
YIELD: 28 Servings.
