1 cup chopped cucumbers
1 tomato, coarsely chopped
1/4 cup coarsely chopped green bell peppers
1/4 cup thinly sliced red onions
1/4 cup crumbled Feta cheese
2 Tbsp Greek vinaigrette salad dressing
1/2 tsp lemon zest
1. Place all ingredients in a large bowl and combine well. Serve immediately.
2. Optional: Place salad in tightly covered container in refrigerator up to 24 hours before serving.
Yield: 2 Servings.
