Easy Hoppin-John

Easy Hoppin-John is a delicious, spicy, and quick (30) minute, traditional Southern meal recipe. A great New Year’s Day or any day of the week option. Best used for large gatherings. Ingredients include, Blackeye peas, sausage, onions and rice. It is well-spiced and all cooked on the stovetop. This also a healthy, low fat, low calories, low cholesterol, low sugars, low carbohydrates, diabetic-friendly and Weight Watchers (8 PointsPlus), (8 SmartPoints) recipe. Makes: (8) servings with a (1-1/4 cup) serving size. Easy Hoppin-John will be loved by all of your family, friends and guests.

INGREDIENTS:

3 (15.5 oz) cans blackeye peas, drained, rinsed
2 (14.5 oz) cans fat-free-low sodium chicken broth
1 (13 oz) pkg. uncured turkey sausage, sliced thin
2 cups chopped onions
1 cup water
1 tsp crushed red pepper
1/2 tsp cayenne pepper
2-1/2 cups instant white rice, uncooked

DIRECTIONS:

1. Place all all ingredients except rice in a Dutch oven and bring to a boil, stirring occasionally.

2. Stir in the rice and simmer for 10 minutes or until tender.

Yield: 8 Servings.
Serving Size: 1-1/4 cups per serving.
