Easy Salmon Patties

Easy Salmon Patties is an easy, (30 Minute) skillet recipe that uses canned salmon and a boxed stuffing mix to make it very simple. Summary: Canned salmon, stuffing mix, Shredded cheese, green onions, lemon juice and mayonnaise are combined and made into patties. This recipe can also be made up to (1) day ahead of time. 1 (14.7 oz) can pink salmon, drained
1 (6 oz) box low-sodium stuffing mix for chicken
1 cup shredded 2% Mozzarella cheese
3/4 cup water
1/3 cup reduced-fat Mayonnaise
2 green onions, sliced
1 Tbsp lemon juice


1. Combine all ingredients together; shape into 12 patties, using about 1/3 cup stuffing mixture for each patty. Refrigerate 10 minutes.

2. Heat a large heavy nonstick skillet over medium heat. Add patties, in batches; cook 6 minutes or until golden brown on both sides, turning carefully after 3 minutes.

3. Patties can be shaped ahead of time. Refrigerate up to 24 hours before cooking as directed.

Serving Suggestion: Serve with a mixed green salad tossed with your favorite light salad dressing.
