Easy Strawberry Cake

Easy Strawberry Cake is a no-cooking recipe for a light and delicious strawberry topped, angel-food cake which uses a store bought cake and a made from scratch fluffy frosting. It takes only (20) minutes to prepare and (1) hour of refrigeration. This is also a low calories, low fat, low carbohydrates, low sodium, diabetic-friendly, heart-healthy and Weight Watchers (4 PointsPlus), (8 SmartPoints) recipe. Makes: (8) servings. INGREDIENTS:

1 (10 oz) round angel food cake
1-1/4 cups skim milk
1 box (4 serving size) vanilla fat-free, sugar-free instant pudding mix
1 Tbsp lemon zest
1 cup strawberries, chopped
2 cups frozen light whipped topping, thawed
6 whole strawberries, halved

DIRECTIONS:

1.  Cut a 3/4″ thick slice off top of cake; set slice aside. Carefully hollow out center of cake, leaving a 1″-thick shell on bottom and sides. Reserve the removed cake for snacking or other use later.

2. Pour milk into a medium-size bowl. Add in the dry pudding mix. Beat with a wire whisk for 2 minutes or until well blended. Stir in lemon zest. Remove 1/2 cup of the pudding; place in another medium-size bowl. Set aside. Spoon chopped strawberries into cake shell; spoon remaining pudding over strawberries. Replace top of cake.

3. Add the whipped topping to the reserved 1/2 cup pudding; stir with a wire whisk until well blended. Spread onto top and sides of cake. Refrigerate at least 1 hour before serving. Garnish with the strawberry halves. Store leftovers in refrigerator.
