Endive-Blue Cheese Salad
Endive-Blue Cheese Salad is a delicious, easy and quick (35) minute recipe for an Italian-style vegetable and fruit dinner salad. The only cooking will be for the prosciutto. Prep Time: 35 Minutes.
1 tsp extra-virgin olive oil +2 Tbsp, divided
4 thin slices prosciutto
2 cups Bing cherries, pitted, halved, divided
2 Tbsp raspberry vinegar
1 Tbsp chopped shallots
1 Tbsp chopped fresh tarragon
1/2 tsp sugar
1/8 ttsp salt
8 cups torn curly endive
1/3 cup blue cheese crumbles
1. Heat the 1 teaspoon oil in a large non-stick skillet over medium-high heat. Add prosciutto and cook, turning once or twice, until crispy, about 2 minutes. Transfer to a paper-towel-lined plate. Break each slice into 3 “crisps.”
2. Place the remaining 2 tablespoons oil, 1/2 cup of the cherries, vinegar, shallots, tarragon, sugar and salt in a blender; puree until smooth.
3. Toss the in a large bowl with the remaining cherries and the dressing. Divide the salad among 6 plates. Top each salad with a scant 1 tablespoon blue cheese and 2 prosciutto crisps.
Yield: 6 Servings.
