Green Beans and Cashews

Green Beans and Cashews is an easy, quick recipe for a delicious side-dish. This would be a good option to add in to your Thanksgiving, Christmas and Easter holiday meals or any day of the week. Fresh green beans, garlic, onions and bell peppers are combined with a Vinaigrette salad dressing which is sauteed in a skillet and served topped with cashews. This is also a healthy, low calories, low fat, low cholesterol, low sodium, low carbohydrates, low sugars, heart-healthy, diabetic-friendly, vegetarian and Weight Watchers (3 SmartPoints), (2 pointsPlus) recipe. INGREDIENTS:

1 lb. fresh green beans, trimmed
1 red bell pepper, chopped
1 small red onion, chopped
2 cloves garlic, minced
1/3 cup balsamic Vinaigrette salad dressing, divided
1/4 cup cashews, chopped

DIRECTIONS:

1. Combine and stir first 4 ingredients in half of the dressing in a large skillet over medium heat 8 to 10 minutes or just until vegetables are crisp-tender.

2. Add remaining dressing; cook 2 to 3 minutes or until heated through, stirring occasionally.

3. Top with the cashews.

YIELD: 8 Servings.
Serving Size: 1/2 cup per serving.
