Green Curry Chicken

Green Curry Chicken is a great option for a Thai-style meal. It takes about (1) hour total time to make and it is all done on the stovetop. Ingredients include: Dark and white meat chicken, curry paste, coconut milk, bok choy, bell peppers and served over brown rice noodles. This is also well-seasoned. It is also a healthy, low calories, low fat, low cholesterol, low sugars, low sodium, low carbohydrates, diabetic-friendly, heart-healthy and Weight Watchers (7 SmartPoints), (7 PointsPlus) recipe. 2 Tbsp green curry paste
1 Tbsp grated peeled fresh ginger
2 tsp fish sauce
1 (14 oz) can light coconut milk
3/4 cup shredded dark meat chicken
1/2 cup shredded chicken breast
1 Tbsp lime juice
1 Tbsp sesame oil
3 cups sliced baby bok choy
1 cup sliced red bell pepper
1 garlic clove, minced
(5 oz) uncooked wide brown rice noodles
1/2 cup cilantro leaves
4 lime wedges


1. Combine first 4 ingredients in a saucepan over medium-high heat. Bring to a boil; reduce heat and simmer 15 minutes.

2. Remove pan from heat; stir in lime juice. Heat oil in a skillet over medium-high heat. Add in bok choy and bell pepper; sauté 2 minutes. Add in garlic; cook 30 seconds.

3. Prepare rice noodles according to the package directions; drain.

4. Divide noodles evenly among 4 bowls; top each with 1/2 cup chicken mixture and 1/2 cup vegetables. Sprinkle with cilantro, and serve with lime wedges.

Yield: 4 servings.
