Grilled Cherry Chops

Grilled Cherry Chops is an easy and delicious recipe for your spring and summer meal rotation. Summary: Boneless pork chops are seasoned and grilled on an outdoor grill and served topped with a dark sweet cherry sauce made from white wine, either fresh or frozen dark cherries, mustard and cran-raspberry juice cooked on top of the stove. This is also a healthy, low calories, low fat, low carbohydrates, low sugars, diabetic-friendly and Weight Watchers (6 SmartPoints), (5 PointsPlus) recipe. Makes (4) servings. 4 (4 oz) boneless, center cut pork chops
Ground black pepper (to taste)
3/4 cup cran-raspberry juice
1 Tbsp cornstarch
2 tsp whole grain mustard
1/4 cup white wine, such as Sauvignon Blanc
1 tsp granular chicken bouillon
1 cup pitted dark sweet cherries or,
1 cup frozen unsweetened dark sweet cherries


1. Preheat grill to medium.

2. Season pork chops with the black pepper. Place chops on grill and cook until internal temperature reaches 145 F. (about 6 minutes per side).

3. Meanwhile, whisk together cranberry-raspberry juice, cornstarch and mustard in a small bowl; set aside. Simmer, whisking constantly for 3 minutes or until reduced by half. Whisk in juice mixture and bring to a full boil.

4. Stir in cherries and simmer for 5 minutes until thickened. Serve over pork chops.

Yield: 4 Servings.
Serving Size: (1 pork chop + about 1/3 cup sauce each).
