Grilled Chipotle Chicken

Grilled Chipotle Chicken is a delicious recipe that takes only (12-16) minutes on the grill. It is well seasoned with a rub made from chipotle seasoning, paprika, brown sugar, onion powder and salt. It’s topped with a buttermilk, chives and sour cream sauce. Serve with salad greens for a delicious summer or spring meal. This is also a healthy, low calories, low fat, low carbohydrates, low sugars, diabetic-friendly and Weight Watchers (4 SmartPoints), (5 PointsPlus) recipe. Makes (4) servings. Cooking Time: 12-16 Minutes.


1/2 cup light sour cream
1/4 cup buttermilk
1 Tbsp minced fresh chives
1 tsp salt, divided
1/4 tsp coarse ground black pepper
2 tsp chipotle seasoning
2 tsp paprika
1 tsp packed brown sugar
1/2 tsp onion powder
(1 lb) boneless, skinless chicken breasts
Fresh salad greens


1. For the Sauce: In a small bowl combine the sour cream, buttermilk, chives, the black pepper and 1/2 teaspoon of the salt. Cover and refrigerate until serving time.

2. For The Rub: Stir together the chipotle seasoning, paprika, brown sugar, onion powder and remaining 1/2 teaspoon salt. Rub onto chicken.

3. Preheat grill to medium. Place chicken on grill and cook 6 to 8 minutes per side or until internal temperature reaches 165 degrees F. Divide chicken into 4 (4 oz) pieces. Serve with the sauce and salad greens.

Yield: 4 Servings.
