Grilled Cuban Chicken
Grilled Cuban Chicken is an easy (1) hour total time recipe for a delicious entree to add to your summer grilling rotation. Marinated chicken breasts are grilled for only 15 minutes and served with a spicy, salsa fresca. This is also a healthy, low calories, low fat, low sodium, low carbohydrates, low sugars, diabetic-friendly and Weight Watchers (6 SmartPoints), (7 PointsPlus) recipe. Makes (4) servings. Grilled Cuban Chicken will be loved by all of your family, friends and guests.
Prep Time: 45 Minutes.
Cooking Time: 15 Minutes.
4 (5 oz) boneless, skinless chicken breast halves (1-1/4 lbs total)
3/4 cup grapefruit juice
2 tbsp olive oil
2 tsp garlic powder
2 tsp ground cumin
1 tsp smoked paprika
1 tsp crushed red pepper
1 cup grapefruit segments
1/2 cup (1/4″) cubed jicama
3 tbsp chopped red onion
2 tbsp grapefruit juice
2 tbsp olive oil
1 tbsp chopped fresh cilantro
1 tbsp chopped fresh jalapeño pepper
1. Mix together the grapefruit juice, olive oil, garlic powder, cumin, smoked paprika and red pepper in a small bowl until well blended. Place chicken in a large resealable plastic bag or glass dish. Add marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor.
2. Meanwhile, for the Salsa Fresca: Mix all ingredients in a medium size bowl. Cover. Refrigerate until ready to serve. Remove chicken from marinade. Discard any remaining marinade.
3. Preheat grill to medium-high heat.
4. Grill chicken 6 to 8 minutes per side or until cooked through. (Or bake in preheated 400° F. oven 15 to 20 minutes.) Serve chicken with Salsa Fresca.
