Halloween Eggs is an easy recipe for a large gathering. It makes (24) servings and would fit in well for children’s Halloween parties at home or school. Ingredients include: hard-boiled eggs, cream cheese, dill pickles, tomatoes and black olives. Summary: The stuffed eggs are decorated with the cut-up vegetables to resemble little devils. 12 hard boiled eggs
(2 oz) Neufchatel cheese, softened
1/4 cup light Ranch salad dressing
2 Tbsp chopped Kosher dill pickles
1 tsp hot sauce
1/4 tsp paprika
6 grape tomatoes, each cut into 8 wedges
3 small pitted black olives, halved lengthwise & sliced crosswise
1. Cut eggs lengthwise in half. Remove yolks; place in a medium-size bowl. Add in the dressing, pickles and hot sauce; mix well.
2. Spoon yolk mixture into a resealable plastic bag. Cut a small corner from bottom of bag; use to pipe yolk mixture into egg white halves. Sprinkle with paprika.
3. Decorate with remaining ingredients as shown in photo, trimming olive pieces as needed.
4. Serve immediately or cover loosely and refrigerate until serving time.
Yield: 24 Servings.
