Healthy Apple Cookies

Healthy Apple Cookies is a delicious recipe for cookies. Ingredients include: Applesauce, apple juice, apples, raisins, molasses and oatmeal to bring out an awesome apple flavor. Similar to “Hermit Cookies” This is also a healthy, low calories, low fat, low carbohydrates, low cholesterol, low sodium, low sugars, diabetic-friendly, heart-healthy and Weight Watchers (3 PointsPlus), (3 SmartPoints) recipe. These would be great for a treat or light dessert and also for your fall and winter holiday baking options. Makes: (30) cookies. Healthy Apple Cookies will be loved by all of your family, friends and guests.

Non-Stick cooking spray
3/4 cup butter, softened
1 cup granulated no-calorie sweetener
2 tsp freshly grated lemon peel
2 tsp molasses
2 large eggs
1/2 cup unsweetened applesauce
1/3 cup apple juice concentrate
1-3/4 cups all-purpose flour
2/3 cup old-fashioned oats
1 tsp baking soda
1-1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1 cup diced fresh apples
1/2 cup raisins


1. Preheat oven to 325° F. Lightly spray cookie sheets with vegetable cooking spray.

2. Beat together the butter, sweetener, lemon peel and molasses on high speed with an electric mixer 1 minute. Add in eggs, one at a time, beating just until yellow disappears after each addition.

3. In another bowl, combine the applesauce and apple juice concentrate; set aside.

4. Combine flour, oats, soda, cinnamon and nutmeg. Gradually add to butter mixture alternately with applesauce mixture, beginning and ending with flour mixture; beat on low speed until blended after each addition. Stir in apples and raisins.

5. Drop by tablespoonsful, 1-1/2 inches apart, onto prepared baking sheets.

6. Bake 10 to 12 minutes. Cool on wire racks.

YIELD: 30 Cookies
