Healthy Beef Soup

Healthy Beef soup is a delicious, easy and quick (40) minute, well-seasoned stovetop recipe for large gatherings. Ingredients Include: Smoked beef, potatoes, butter, sour cream, onion and corn. Seasoned with salt, pepper and celery seed. This is also a low calories, low fat, low cholesterol, low sodium, low carbohydrates, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (4 PointsPlus), (7 SmartPoints) recipe. Makes: (10) servings. Healthy Beef Soup will be loved by all of your family, friends and guests.
Prep Time: 10 Minutes.
Cooking Time: 30 Minutes.


(1/2 stick) butter
1 cup water
2 cups shredded potatoes
2 Tbsp chopped onion
1 Tbsp all-purpose flour
4 cups 2% milk
1 (3.5 oz) package smoked sliced beef,
cut in small pieces

1 (8-75 oz) can whole kernel corn, undrained
1/4 tsp celery seed
1 cup sour cream
Salt and pepper (to taste)
Chopped Parsley (optional)


1. In a large saucepan melt butter. Add water, potatoes and onion. Cover and bring to a boil.

2. Lower heat to a simmer and cook until potatoes are done, about 20 minutes.

3. Stir in flour and cook 1 minute.

4. Gradually add in milk, stirring constantly.

5. Stir in beef, corn and celery seed.

6. Gently blend in the sour cream.

7. Riase heat Heat to serving temperature. Add salt and pepper to taste.

8. Serve garnished with a dollop of sour cream and parsley, if desired.

Yield: 10 Servings.
