Healthy Cabbage Soup

Healthy Cabbage Soup is an easy, quick, (45) minute recipe for a delicious, hearty and healthy vegetable soup. Ingredients include: Chopped cabbage, carrots, onion, green beans and zucchini. It is well seasoned with oregano, basil, garlic, salt and black pepper. All simmered on the stove. Prep Time: 15 Minutes.
Cooking Time: About 25-30 Minutes.

INGREDIENTS:

3 cups fat-free beef or chicken broth
2 garlic cloves, minced
1 tbsp tomato paste
2 cups chopped green cabbage
1/2 yellow onion, chopped
1/2 cup chopped carrots
1/2 cup green beans
1/2 cup chopped zucchini
1/2 tsp dried basil
1/2 tsp oregano leaves
Salt, to taste
Ground Black Pepper, to taste

DIRECTIONS:

1. Spray a kettle or soup pot with non-stick cooking spray.

2. Add the onions, carrots and garlic to the pot and saute for 5 minutes.

3. Add in the broth, tomato paste, cabbage, green beans, basil, oregano and Salt & Pepper to taste.

4. Simmer about 5-10 minutes or until all vegetables are tender. Add in the zuccini and simmer for another 5 to 10 minutes or until tender.

Yield: About 8 servings.
Serving Size: 1 cup per serving.
