Healthy Minestrone Soup

Healthy Minestrone Soup is a quick (35) minute recipe for an Italian-style soup. It would be a great option for left-over chicken also. NOTE: (You will need a large-size saucepan or soup kettle for this. This recipe makes 9 cups). Ingredients include: celery, garlic, chicken, tomatoes, onion and cannellini beans and is well-seasoned. It is also a healthy, low fat, low calories, low cholesterol, low sodium, low carbohydrates, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (5 SmartPoints), (4 PointsPlus) recipe. Healthy Minestrone Soup will be loved by all of your family, friends and guests.

Equipment Required:
A large 3 or 4 quart saucepan or stockpot.


1 Tbsp olive oil
1 medium-size onion, chopped
2 celery ribs, chopped
2 garlic cloves, minced
1 medium-size sweet potato, peeled, cubed
1 (28 oz) can crushed tomatoes
1 (15 oz) can cannellini beans, drained, rinsed
3 cups low-sodium chicken broth
1 cup chopped cooked chicken
1/3 cup quick-cooking barley, uncooked
1 tsp dried oregano
Salt, to taste
Ground Black Pepper, to taste
Fresh basil leaves, optional


1. In a large saucepan, heat the olive oil over medium heat.

2. Add in the onion, celery and garlic. Cook until onion is tender, about 3 minutes.

3. Add in the sweet potato and continue to cook for 2 minutes.

4. Add in tomatoes, beans, broth, chicken, barley, oregano and dried basil. Cover and simmer for 15 minutes. Season to taste with salt and pepper.

5. Garnish with the Fresh basil leaves if desired.

Yield: 9 servings.
