Healthy Nacho Skillet

Healthy Nacho Skillet is an easy and quick recipe for a delicious any night meal. It is a meatless recipe that uses ground soy crumbles to replace the beef. Ingredients include: Ground Soy Crumbles, frozen corn, tomato sauce and Cheddar cheese. This is also a low calories, low fat, low cholesterol, low sodium, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (7 PointsPlus), (8 SmartPoints) recipe. Makes: (6) Servings. 2 cups ground soy crumbles
(Look for it in frozen food department or,
meat department of most large supermarkets.)

2 cups frozen corn, thawed
2 tsp chili powder
1 (15.5 oz) can no-salt kidney beans, drained, rinsed
2 (8 oz) cans no-salt tomato sauce
1/4 cup water
1 cup slightly broken baked tortilla chips (about 1 oz)
3/4 cup 2% shredded Cheddar cheese


1. Place the soy crumbles, corn, chili powder, kidney beans, tomato sauce and water in a (10″) skillet over medium-high heat.

2. Simmer for 10 minutes, stirring occasionally.

3. Sprinkle with tortilla chips and cheese. Cover and let set for about 5 minutes until the cheese is melted.

Yield: 6 Servings.
