Healthy Orange Cupcakes

Healthy Orange Cupcakes is a quick 10 minute to prepare recipe. Main ingredients include: a boxed yellow cake mix, sugar-free orange marmalade and sugar-free whipped topping. INGREDIENTS:

1 (2 layer size) box yellow cake mix
1/3 cup canola oil
1/2 cup water
3 large eggs
1 (12.75 oz) jar sugar-free orange marmalade, divided
1 (8 oz.) tub frozen sugar-free whipped topping, thawed

DIRECTIONS:

1. Preheat oven to 350° F. Line 24 muffin cups with paper cupcake liners.

2. Beat together the cake mix, oil, water, eggs and 3/4 cup orange marmalade in a large bowl with an electric mixer on medium speed for 2 minutes. Fill muffin cups 2/3 full of batter.

3. Bake 20 to 22 minutes or until toothpick inserted in center comes out clean. Cool completely on wire rack.

4. Spread about 1/2 teaspoon remaining orange marmalade on top of each cupcake. Garnish each with dollop of whipped topping.

Yield: 24 cupcakes.
