Healthy Potato Salad

Healthy Potato Salad is a delicious and easy recipe for what will become one of your favorite side dishes once you have tasted this. Friends will beg you for this recipe. (3 lbs) small, new red (B-size) potatoes, quartered
1/2 cup reduced-fat mayonnaise
1/4 cup buttermilk
2 tbsp chopped fresh chives
1/2 cup shredded 2% Cheddar cheese
8 slices turkey bacon, cooked, crumbled


1. Cook potatoes in boiling water 20 minutes or until tender; drain. Cool.

2. Mix the mayonnaise, buttermilk and chives together in a large bowl. Add in potatoes and cheese; toss to evenly coat.
Refrigerate 3 hours.

3. Top with the bacon just before serving.

YIELD: 8 Servings.
Serving Size: 3/4 cup per serving.
